High in the village of San Jose, outside Amaga in Southwestern Antioquia, the Taborda Rojas family has been farming coffee at 1,800 to 1,900 meters for generations. This lot is Pink Bourbon, one of the more delicate and sought-after varietals coming out of Colombia right now, grown alongside Castillo Rosario and Cenicafe 1 on the same hillside.
Washed processing keeps this one clean and bright, letting the Pink Bourbon character come through clearly in the cup: think floral notes up front, a citrusy snap, and a delicate sweetness that lingers without ever turning heavy. We roast it light to medium right here on the Windward side, keeping the profile gentle so the varietal can actually speak for itself.
This is a coffee for someone who wants to taste what all the fuss over Pink Bourbon is about, with a little bit of Hawaii in every cup.
